Mexican Style Scrambled Eggs

These scrambled eggs with chopped tomato, onion and green chilli are known as ‘a la mexicana’ because the colours of these last three ingredients echo the colours of the Mexican flag. This is a typical breakfast dish and combines naturally with soft corn tortillas, beans and any Mexican salsa. Recipe source - "Fresh Mexican” by Monica Medina-Mora and Angeles Ayala.

When I made dates paratha my kids enjoyed it a lot then I wanted to try banana chapathi for long time and I made it yesterday. They liked it very much. I am sure your kids would love this too. You can serve this as a breakfast or evening snack with a cup of milk. If you wish sprinkle some honey on top of the chapathi and serve.

Huevos Rancheros - Mexican breakfast Recipe

When Julie and Love to experiment announced Flavours of Cuisines – Mexican, I immediately rushed to the library and borrowed some Mexican cook books. I wanted to prepare some simple dish and when I gone through the books many of the ingredients stated are not available in the supermarket. So I decided to cook with the ingredients that are available here. This is one of the simple dishes I found from the book “Fresh Mexican” by Monica Medina-Mora and Angeles Ayala.

In this dish fried eggs are placed over a corn tortilla, and then covered with a delicious tomato sauce. This is a classic item of the Mexican breakfast menu served with black beans and crusty white bread. Corn tortillas are not available here and I prepared the dish with wheat flour tortilla.

We all liked this and I am sure I will make this again and again.
