Green bean soup is one of a Chinese dessert which I tasted recently, I could guess the ingredients but still wanted to go for an authentic recipe and I got the recipe here which is easy to prepare at home.Ingredients
- Green bean (Mung bean) – ½ cup
- Sago – ¼ cup
- Dried orange peel (tangerine) – 2 small pieces
- Screw pine leaf/Pandan leaf – 1
- Rock sugar – ¼ cup
Soak green bean overnight.
Bring a pot of water to boil add sago and cook it until it becomes translucent. Run the cooked sago through a fine sieve and running water to remove excess starch. Keep aside.
Rinse green bean and drain. Take a sauce pan add 4½ cups of water, bring it to boil, add green bean, screw pine leave, tangerine peel. Reduce the heat and cook until the beans become soft. Stir in occasionally. If necessary add hot water and cook until the beans become soft.
Add rock sugar and cook until it dissolved. Remove from heat; discard tangerine peel and pandan leaf. Add cooked sago and stir.
Serve warm or refrigerate and serve cold.
