Huevos Rancheros - Mexican breakfast Recipe


When Julie and Love to experiment announced Flavours of Cuisines – Mexican, I immediately rushed to the library and borrowed some Mexican cook books. I wanted to prepare some simple dish and when I gone through the books many of the ingredients stated are not available in the supermarket. So I decided to cook with the ingredients that are available here. This is one of the simple dishes I found from the book “Fresh Mexican” by Monica Medina-Mora and Angeles Ayala.

In this dish fried eggs are placed over a corn tortilla, and then covered with a delicious tomato sauce. This is a classic item of the Mexican breakfast menu served with black beans and crusty white bread. Corn tortillas are not available here and I prepared the dish with wheat flour tortilla.

We all liked this and I am sure I will make this again and again.

Ingredients
  • Soft corn tortillas – 4
  • Vegetable oil – for brushing
  • Eggs – 8
  • For Ranchera sauce
  • Tomatoes – 4
  • Onion – ½ (roughly chopped)
  • Garlic clove – 1 (roughly chopped)
  • Green chillies – 4 (roughly chopped and deseeded for a milder taste)
  • Vegetable oil – 1tbsp
  • Chopped flat leaf Parsley – to garnish (optional)
  • Salt – to taste

Method

For making sauce, add tomatoes, onion, garlic and chillies in a blender and blend to a fairly smooth texture.

Heat oil in a sauce pan and add tomato mixture and simmer for about 10 minutes or until cooked, stirring constantly.  Add salt, stir and remove from heat.

Take a frying pan and bring it to heat, brush the tortillas with oil and warm each side of the tortillas for about 30 seconds until soft. Cover with foil to keep warm.

Take a non-stick fry pan bring it to heat, once hot break 2 eggs into the pan and cook over low heat until the whites have set. Once done remove from fire and repeat the same for the remaining eggs.

Put one tortilla on each plate and place 2 cooked eggs on top. Spoon the ranchera sauce over the whites of the eggs, leaving the yolks exposed. Sprinkle some chopped parsley and serve immediately.
