Carrot Kheer

Ingredients
  • Carrot – 250gms
  • Milk – 1 litre
  • Sugar – 250gms
  • Cashews and pistachio – 50gms
  • Cardamom powder – 1 teaspoon

Method

Wash the carrots and peel off the skin. Cut the carrots into small pieces and cook it in a pressure cooker.

In the meantime, boil the milk and keep it aside.

Drain the water and store it for later use. Grind the cooked carrot into a paste.

Mix drained water, carrot paste, sugar, cardamom powder and bring it to boil.(stir continuously)

Then add milk and stir.

Finally roast the cashews and pistachio in ghee and add it.

Serve hot or refrigerate it and serve cold.
